The New Year so far...

Oh yeah ... firehorse year off to a great start ;    ax murders ... WWIII ..... ( we running out of farm fuel already in many locations )  . 

 

No petrol ... no diesel  ..... no gas  ......  I got solar and batteries for lights  and  since . fire horse  year  ; I already got a huge 'overstock' of fire wood in the big shed ;

Many various and once fairly dependable man made systems to supply basic needs for people are being degraded or unraveling before our eyes!!   Many millions of us count on having electricity for lights and appliances, natural gas for heating and cooking , water on tap, grocery stores, gasoline and or diesel for transportation, medical care and medicines,  jobs, law abiding fellow citizens, safe neighbor hoods for our families, good schools for our kids, healthy eco-systems,  a working internet, etc...  Add to that the horrible and deadly impacts of regional or growing wars along with very radical weather ranging from A-Z and things do not look so good!   Mankind's karma's is sure coming to a head!  Some of us are relatively and physically safe for awhile but how long will that last as the dominos, so to speak, keep falling?  

 

Getting right with "God" or "Mother" nature in whatever way one feels and hopes about the goodness of life or "God" or "Mother" nature is basically the bottom line for us.  Ai or ET. aliens won't save us.

I started by one of my favorite methods -- counteracting the excessive energies of the year with the vibe of their edible opposites.  Specifically, I revisited my skill of making fermented foods.  Known to "extinguish toxic Fire" in classical medicine.  Sauerkraut, homemade cottage cheese, kvass, and now this.  I renamed this masterpiece, known as the Guria Cabbage (of Georgia the country) Millefiori.  I'm using an Italian millefiori paper weight on top (the weight is used to keep the contents fully submerged while fermenting) and the contents of the jar look somewhat similar to that.  Behold the Millefiori fermented vegetables!

Depends on what you do with it, but yes, there's several ways to preserve it for a whole year without a fridge...  and, importantly, without canning and without vinegar that kills not only the taste but also all the microbiome-friendly critterts.  (Maybe longer, but no one has the power to stop eating it while it lasts, while no one has the power to make a batch large enough to be eaten continuously and still last into the next year.  Into the next week maybe :D  )  I don't have a cellar, alas, so mine will go to the fridge once ready -- while there's still electricity.  :)

in some parts of the US and other areas in the world people still do a lot of canning along with having their root cellars to store long lasting foods without the need for electric devices to heat or cool their cellars for temperature.  Years ago I used to buy the Mother Earth News magazines that had hundreds of  great ideas for a more back to nature way of living,  but I never got far into it although I still loved reading about it when I was younger and dreamed of having a little homestead away from the hustle and bustle of so called "modern life".

They indeed can become the saviours of planet earth unlike us humans(?).
