Epic Food Appreciation/Outdoor Cooking Masters

Warning:  Don't watch or read this while fasting lol.

 

I happened upon Almazan Kitchen while researching recipes and techniques for camping cooking techniques.  I've now watched everything they've posted and accomodated many new techniques.  It's pure simplicity and joy to watch a master in his element. 

 

Part cooking show, part nature appreciation, part ASMR channel.  The location features as heavily as the food.  Kitchen is integrated in nature.

 

What stands out and I deeply appreciate, is that there are no explanations of recipes, no speaking at all really,  just pure video of his process with the sounds of the fire, the sizzling fats and the waterfall nearby.  Pure food porn at its finest.

 

Here's the first one I encountered.

Ahhh cooking porn   ;

Venusian Oysters  a la Nungai  ;

 

1 doz large fresh oysters.

 

Sprinkle with Moet and Chandon  champagne liquor ,  place a sliver of artichoke heart on each,  a dollop of home made green peppercorn sauce,  a sliver of lobster tail ( with the tail fan attached and curling up from the oyster ) and thin strips of smoked cheese criss crossed over the top and a sprinkling of caviar  , lightly grill .

 

PS  Dont believe all you  hear about oysters and 'porn'   ; I shared this dish with a young lady and afterwards  only 4 of the 6 oysters 'worked' .

I happened upon Grandpa Kitchen on YouTube. I have adapted some of his recipes for a family of 4 rather than the masses he cooks for and they are delicious. This is our favorite...

I just found a lost ingredient  at a new Filipino shop at the regional city .  Its a type of paste that you mix with stock and then cook chicken bits in, and they go goey and get a coating, you then  let them dry out a bit and deep fry  so they have this crunchy spicy coating

 

Filipino deep fried chicken ,    mmmm - MMM !

Korean Buddhist Monk Jeongkwan is featured in Season 3 episode 1 of Chef's Table on Netflix.  They address her intense calling to shun traditional marriage and join the monastic life at an early age.  She talks openly of her trouble adapting to monastic life and almost giving up and going back home in the early years. 

 

Then they follow her through her garden and her kitchen, which are maintained as openly and authentically as the food she prepares with presence for the Temple.

 

Such simplicity shines.  Highly recommend that episode in particular, but the whole series is done well in my opinion.

Ahh ... vegan food .

 

The other day at the local super I picked up a litre  of milk and a small tray of  baklava  ....     " $14 .60   thankyou ."

 

" Whaaaat  !  How much is the baklava ?  "

 

" $12.40 . "

 

:o  ... it was $4.80 last week ! "

 

" No, this is vegan baklava . "

 

I returned it and got the normal one at $4.80 .  " What ingredient in this one is NOT vegan ? "

 

" I dont know . "

 

So I read the label  ......   butter  .....    Vegan baklava is  more than double price because it uses ' I cant believe its not butter ."   ???

Actually,  all this talk of food and 'porn' , doesnt make much sense , what has food got to do with porn anyway ?

 

Bugger this, I'm off to make some lunch ... I got some really nice fresh mussels , from the sea food shop this morning ;

I'm watching the Salt Pile Chicken now and I've never seen such a beautiful zen-ish cooking demonstration.  The Tea ceremony has got nothing  on this guy.

Yea, ceremony is a great word for it.  His presence and motions seem so harmonized with where he's at.  He seems utterly comfortable in his kitchen and his kitchen seems to be wherever he is in the forest.   really draws me in.  I first clicked on it due to the amazing picture of what he was making and a new recipe.  Within a few minutes though, I was drawn in to the flow of his process and now I watch to witness whatever he's doing.

 

His motions, how he approaches and handles the food, his knife, the pots.  He exudes comfortable mastery and sung to me.  You nailed it with the ceremony reference.

I have great passion for this thread silent thunder by trade I am a chef and own a natural organic food market and restaurant. this is a plate of mine that could be considered food porn.

Hey ! Thats (sorta) how I cook my  king prawns  , can fit 3 on a metal  BBQ fork (after marinating) with a long handle and open the door to the fire box and stick them in over the hot coals and turn them slowly for about 20 secs.  yum !

 

 

Hmmm .... I just remembered I have an unbaked ham and cheese croissant  in the fridge   :)  ...... , gotta go !

what's cool is when you find something amazing, that you might be able to come close too.  This is one of the rare Almazan recipes I might be able to get to make.  (I'm glad he didn't grab Mr. Ramsay and start de-feathering.)

After watching this topic, I also decided that it is time for me to go and do something equally attractive in my kitchen. :rolleyes:

Lately I have returned to the delights of congee for breakfast .  I Used to like making up the conge breakfast table at work with a full range of :

 

Congee, diced   steamed chicken breast, diced tofu, chopped coriander, chopped small shallots,  slivers of red capsicum,  chopped fresh chilli, crushed peanuts, bean sprouts, small crispy dried fish, fried  crispy shallots,  chopped chilli soaking in rice vinegar, boiled egg, bits of left over Peking duck......  anything you want really, or any type of leftovers   fish sauce various soy sauces, different types of chilli sauces and pastes  - add what you want.

It was one of my favourite jobs ;  finding a selection of nice  little bowls, preparing all the ingredients, making each dish a little work of art .... laying out the table .... the arrangements of  different types of sauces and pickles  Oooo what a creation .... then a stampede of people, and at the end a messy table and  strewn empty  side dish bowls and platters all about .

 

A bit like spending hours on a sand painting and Lama  comes along and destroys it   :D 

 

I was very popular with our Asian workers though .

 

My own fav combo  is chicken or tofu, capsicum, coriander, bean sprouts,  chilli in rice vinegar, fish sauce and light soy 

 

The congee part is easy ; boil cooked rice in water with a heap of grated ginger  until it turns into a porridge

 

Mmm Mmmmmmm .

Haven't watched an episode of Almazan Kitchen since my last post. 

Both my wife and I love to cook.  I tend toward breakfasts and have been compelled to try my hand at Shakshouka.

So I logged in to their channel, hoping to find a Shakshouka episode for research, and found this instead.

 

oh. my. gawd.
