Also remove the puerh stored in the tin container and keep it in a paper bag (or two, one inside the other) so it can breathe and age (ferment) properly. Gerard Posted August 17, 2018 (edited) Enjoy! The Autumn Bing Dao is one of my favourite puerh cakes. It's excellent. Btw, don't break the cake in small pieces or the brews will turn bitter. Make sure they are clean, large enough -to fit in the pot/gaiwan- chunks which will reveal the tea notes evenly. Using a sharp metal pick will do the job correctly (https://bit.ly/2L0ksMz).
