Can anyone recommend a good book on Einstein's theory of relativity?

 

I really want to understand it through and through. I don't have too much advanced mathematics under my belt, but I want to fully understand the theory and go from there.

Try his original paper; always a good place to start, you might be brighter than you think as it is quite simple, very elegant:

If you have a basic notion of maths you can follow most of concepts without doing the math.

Why does E=mc2 by Brian Cox and Jeff Forshaw, Da Capo Press

 

Well written, it is an excellent introduction to Special Relativity, I don't remember much about its discussion of General Relativity, but it is probably very good also.
